Curried Cottage cheese / Mozzarella cheese
A simple recipe with ample veggies
Steps

Heat olive oil and butter and sauté chopped green chillies, ginger and garlic for a minute

Add chopped onions and sauté till they become translucent.

Add chopped and steamed yellow and green paprika and sauté for 2 minutes
- 4
Add chopped tomatoes [excluding seeds] and sauté for 2 mins. The tomatoes need not become tender. Season it with salt.

Add diced cottage cheese or grated mozzarella. stir for 2 minutes and switch of flame. Use cottage cheese if you want it to be chewy. Use mozzarella cheese if want it to be sticky and stretchy.

Serve hot with chapathis. Finely chopped and roasted potatoes in butter is an additional delight.
