Ingredients

  • 3 CupsWhite Rice Cooked
  • 3 TablespoonsWhite Oil
  • 1/2Onion Large , finely chopped
  • 5 ClovesGarlic , minced
  • 1 cmGreen Bell Pepper , chopped into squares 1/2 Cup
  • 2Tomatoes Medium
  • 1/4 CupMozarella
  • 1 TeaspoonRed Chilli Powder
  • To TasteSalt
  • 1/2 TeaspoonPepper
  • 1 TeaspoonTaco Mexican Seasoning

  1. 1

    Chop tomatoes into large chucks, and make a coarse paste in the grinder. This paste should have broken down tomato pieces. Do NOT make a puree or a smooth paste.

    In a large non-stick wok, heat the oil. Then add the onion, garlic, and green bell pepper. Saute for 3-4 mins, till the onion becomes translucent and the bell pepper becomes tender.

    Sprinkle a little bit of salt. Now, pour in the tomato paste and mix. Simmer for 30 secs.

    Add in the cooked rice. Mix well. Keep flame on low. Then cover the wok with a lid.

  5. 5

    After 3-4 mins, add in chilli powder, salt, pepper. Mix the rice.

  6. 6

    Cook uncovered for another 3-4 mins, till the tomato paste is completely soaked up by the rice.

  7. 7

    Then add the Mexican seasoning. Stir.

  8. 8

    Finally add in the cheese (mozzarella). Mix and let the cheese melt into the rice.

    Mexican Rice is ready to be served!
