This classic five spice mixture is at the core of many vegetarian and fish dishes in Bengali cuisine. The word _phoron _means sputtering in Bengali, which is what these spices do when added to hot oil. This simple mixture is wonderfully fragrant and will add a touch of magic where ever it is added in.
Panch phoron is not generally used in meat or chicken dishes.
