Chicken Tikka Biriyani

Good-bye to the scorching months, says Dubai as she is ready to welcome the festive season now. Here in Dubai this is the most wonderful climate anyone can experience before the winter. Also for us the Dubai  residents ,this is our "Barbecue season " too :)....
Last month with our family and friends we also planned for a barbecue night at a park in Sharjah..There were around 20 people , so the arrangements to be done for the barbecue were divided among each of us and my role was to marinate a portion of chicken for the grill.I bought around 3 kg chicken ,cut them into tikka like pieces and marinated them in the morning itself .Then packed it up well for the night and kept them inside the refrigerator.
But unfortunately we couldn't join our friends that night as something else came on our way and also couldn't give the chicken to them . So here at home we three --me,hubby and our son ,were left along with the 3 kg marinated chicken . I always love to cook and have fresh foods and will use leftover food only up to one day or  two.So freezing the cooked stuff for a whole week and reheating them to have them is not my way, as I have grown up seeing my mother  cooking daily fresh foods for us and also at my hubbys home it's the same .so i was wondering what will i do with this whole lotttt of chicken.
Thank God , that i marinated the chicken in a North Indian flavor, so I googled what all can i make with chicken tikka and "Chicken Tikka Biriyani" striked my eyes.  As i have alr...

Ingredients

  • 1 kgChicken - (cut into small pieces)
  • 2 tspsginger-garlic paste -
  • 1/2 cupyoghurt -
  • 1/2 tspturmeric powder -
  • 1 tbspnchilly powder -
  • 1/2 tspblack pepper powder -
  • 1/2 tspcumin powder -
  • 1/2 tspfennel powder -
  • 1 tspgaram masala powder -
  • 2coriander leaves chopped - tbspns
  • as requiredsalt -
  • 4Onion Large ( finely sliced) -
  • 2Tomato large -
  • 2 tspsginger-garlic paste -
  • 2chilly green - slitted
  • 1/4 tspturmeric powder -
  • 1/2 tspcoriander powder -
  • 1 tspgaram masala powder -
  • 1/4 cupyoghurt -
  • as requiredcoriander leaves mint leaves and -
  • 1/4 cupoil -
  • as requiredsalt -
  • 3 cupsBasmati Rice - (soak 1/2 an hour in water and drain)
  • 2 noscinnamon stick -
  • 4 noscloves -
  • 1Bay leaf -
  • 5black pepper whole -
  • 1/4 tspcumin seeds -
  • 2oil - tbspns
  • as requiredsalt -
  • strandssaffron (soaked in 1/4 cup water or milk for 1/2 hr) - few
  • as requiredonions fried -

Steps

    Marinate the chicken with all the ingredients listed in the marinade and keep it for 4-6 hours or overnight in fridge for better taste.

    Heat a thick bottom pan with oil enough to  shallow fry the marinated chicken and keep the remaining oil to add in the masala.

  3. 3

    For Masala- Heat oil in a biriyani pot.  Add ginger-garlic paste followed by onion, add the remaining chicken fried oil into it, add green chilly and little slat and saute till onion become translucent. Add tomatoes and saute well.

    Add all powders and saute well.Cook together until the oil is released from sides.

    Whip the yogurt and add. Add coriander and mint leaves and mix well.Check for salt and add if required.

  6. 6

    Add the shallow fried chicken and mix well. Add 1/2 cup hot water,cover and cook for sometime,switch off the flame and keep it aside.

    For Rice- Heat a pot with oil and temper the whole spices. Add 5 cups of water and bring them to boil. Add salt.Then add the soaked rice to the boiling water.cook until the rice is about 3/4 done.Strain if water remains.

    For biriyani dum- Put half of the rice on top of the chicken tikka masala,sprinkle some ried onions and chopped coriander leaves,drizzle 1 tbspn ghee and saffron water.Add the remaining rice over it and add fried onions,coriander leaves, ghee and saffron as before.Cover the pot well and tight, then  keep it in low flame for about 20 mins.

    Serve hot and enjoy them with raita and pickle!!!
