Cooking Instructions

Cut polish sausage into large chunks, chop cabbage...Combine all ingredients in a large bake pan, melt down butter and pour over mixture

Bake at 350 for 30 min, stir and put back in oven for an additional 30min

I miss the wild mushrooms that my father gathered from the local forests surrounding our home in Willis, Michigan in the 1950s. He looked for two types in particular, a morel mushroom in the spring and a brown mushroom in the early fall. In the fall, there were many types of mushrooms—some edible, and some deadly poisonous. My dad knew the one type that was edible and could recognize it at a glance. We feasted on fresh from the forest mushrooms sautéed with onions in butter.Mushrooms are also a mainstay of a fall/winter dish of Hunter’s Stew, or Bigos (bee-goes). The traditional meats for this sauerkraut/cabbage stew are those that a hunter might find—venison or rabbit, perhaps.My mother made her version with pork ribs and smoked or fresh kielbasa, simmered for hours in a big soup pot on the stove. She called it Kapusta (kah-poo-stah) which is the Polish word for cabbage. Every Polish family has their own version. This recipe is an easy one for beginners. My first day at kindergarten; I do not remember getting on the big, yellow, school bus to go home. I only remember being put on a bus. Someone put a tag on my chest that let everyone know which bus I was to take home. They put me on the wrong bus. I was only five—what did I know? I only remembered my address: “10964 McKean Road.” Everyone had been delivered safely home. I was the only one left on the bus. The bus driver asked me where did I live? I answered “10964 McKean Road.” “Show me your address!” She checked my tag and said. “You are on the wrong bus!” Makes no difference, I knew my address “10964 McKean Road.” The bus driver headed for McKean Road, I recognized my house and got off. My mother was frantic. I was over an hour late getting home. “What happened? Why are you so late?” I had no idea. I sprawled out on the dining room floor and “read” the comic section of the newspaper. My mother brought me a bowl of chicken soup. I ate it on the floor. I was oblivious to my mother’s questions. I just enjoyed my soup.Chicken soup was a staple at our home when I was growing up. At weddings a fancy version was served which was very clear and contained very fine Polish kluski, or noodles. I have since learned that the Poles do not call what we know as noodles, kluski, but reserve the word for dumplings. But in our house, all noodles were kluski. My version is the one my mother made, with lots of vegetables that grew on the farm. Adam Janowski -

I love a pork roast (pieczeń wieprzowa in Polish) and this is one of my best recipes. I call it "In the Polish style" as it is heavy on the garlic. Don't cut back on the garlic, though, because, as the roast bakes, the garlic cloves caramelize and become sweet bits of goodness within the roast. This was a common roast served at our kitchen table when we were growing up in Michigan. Adam Janowski -
