Gardener's Pie

This is a comfort food with just 300calories! I love potatoes in all forms and they go really well with all vegetables. In this dish, I added a few extra seasonal veggies then the recipe called for.This is kind of vegan version of shepherd's pie.

This is a comfort food with just 300calories! I love potatoes in all forms and they go really well with all vegetables. In this dish, I added a few extra seasonal veggies then the recipe called for.This is kind of vegan version of shepherd's pie.

Drain the boiled potatoes, mash them and add milk and cook on medium heat on a skillet.Stir until desired consistency. Add salt, freshly ground pepper,oregano to taste, 1 tbsp olive oil and set aside.

Heat oil in a large saucepan and saute onion and garlic and for 5 minutes.

Add remaining vegetables and saute a further 15-20 minutes.

Add beans and keep stirring over heat until combined,add herbs and simmer 5 minutes. Mixture should be fairly thick.

Turn into a deep dish, top with mashed potato and serve.
