Roasted Butternut Squash

Ingredients

  1. 1 largeButternut Squash ( about 3 pds.)
  2. 3 tbspbutter or good olive oil
  3. 2 tbspbrown sugar
  4. 2 tspsalt
  5. 1 tspfresh ground pepper

Cooking Instructions

    Preheat oven to 400°

  2. 2

    Peel and seed Squash and cut into 1 inch chunks. Place Squash on a large non stick sheet pan.

    In a small bowl melt butter in microwave about 20-30 seconds.

  4. 4

    Add brown sugar to melted butter and blend well.

  5. 5

    Pour butter brown sugar mixture over Squash. Give squash a toss so to evenly coat. Salt and pepper and toss again.

  6. 6

    Roast squash in the oven for 25-30 minutes turning once in between cooking time.
