My wife started her first shift at the hospital. She texted me to say she was too busy to eat lunch but she was hungry and tired. I found this recipe while looking for gluten free snacks for her. This recipe is rich so you may want a glass of milk or soy milk to wash it down. So yummy.

My wife started her first shift at the hospital. She texted me to say she was too busy to eat lunch but she was hungry and tired. I found this recipe while looking for gluten free snacks for her. This recipe is rich so you may want a glass of milk or soy milk to wash it down. So yummy.

Ingredients

15 mins
  1. 1 1/4 cuprolled oats
  2. 1/3 cupagave syrup, light
  3. 1/2 cupcreamy peanut butter
  4. 1/4 cupMint truffle chocolate mix
  5. 1 tbspvanilla extract
  6. 2 tbspinstant espresso granules
  7. 1sprinkles or sweetened chocolate powder

Cooking Instructions

15 mins
  1. 1

    Blend dry ingredients in a blender until fine.

  2. 2

    Add wet ingredients to blender and mix well.

  3. 3

    Roll into balls about the size of a quarter and roll into sprinkles or sweetened chocolate powder.

  4. 4

    Either chill and they will stay good for about a month or freeze for up to a year.
