Cucumber with maple dressing

I highly recommend using the best maple syrup you can find for this recipe.
When toasting the sesame seeds I use a mix of white and black seeds - if using all black you don't get a nice visual clue to how much you are toasting them.
You can use toasted sesame oil, but the flavour of the freshly toasted sesame seeds is much nicer so I prefer to use a milder, but complimentary oil.

Slice the cucumbers into 0.75cm thick slices

If you have time, place the cucumber in a colander and sprinkle with the salt. Leave for 20mins, the salt will absorb some of the water and drain away - it won't make them salty

Combine the vinegar, sesame oil, maple syrup and soy sauce, then pour over the cucumber

Toast the sesame seeds in a dry pan until golden and sprinkle on top
