Ingredients

  • one bunchbok choy of
  • 3 numbersportobello mushroom of
  • 1potato diced into small
  • 1 tspsoy sauce light
  • 1.5 cupscoconut milk of
  • to tasteSalt
  • Green curry paste
  • 1 tbspchopped ginger
  • 1 tbspgarlicchopped
  • 1 tspcoriander of powder
  • 1/2 tspcummin of powder
  • 1onionchopped
  • 2 tbspslemon juice
  • 1 bunchcoriander leaves of
  • 4green chillies deseeded green

Steps

  1. 1

    Make a paste from the ingredients mentioned under the green curry paste.

  2. 2

    Saute the mushrooms and potato in oil.

  3. 3

    Add the paste to it. Then add the soy sauce. Stir it and add the coconut milk.

  4. 4

    When the mixture comes to a boil add the bok choy leaves.

  5. 5

    Add salt as requied and cook until the leaves are wilted off.

  6. 6

    Serve hot with cooked jasmine rice.
