Yellow Rice

If you know me, you will know that I am always looking for rice variations to serve with meat or a curry. This Yellow Rice inspiration is from this restaurant called Chicken Tikka in Kuwait. Along with their charcoal grilled chicken they also serve a yellow rice as an option that you can choose instead of the deep fried oil dripping flat bread / roti type thing they serve the meat with ... I made some salmon recently, and usually for salmon I have pita bread and a salad but it's starting to get colder here in Wellington, New Zealand and I wanted lunch to be warm ... so this rice recipe came into the picture. It went along with a beautiful piece of salmon, and veggies roasted in the oven with a spicy spice mix. YUM!

Ingredients

  1. 2 cupswhite rice
  2. 1 tspturmeric powder
  3. 1 tspcoriander powder
  4. 1 tbspginger garlic and paste
  5. 2 tbspsbutter ghee or
  6. 1 tspsalt
  7. 4 cupswater of

    First up, wash the rice before making this dish :)

  2. 2

    In a medium sauce pan, add the butter, the ginger & garlic paste, turmeric and the coriander powder.

  3. 3

    Let it cook on medium low heat for about 30 seconds. Add the rice and give the spices and rice together a good mix.

  4. 4

    Add four cups of water and the salt, mix completely. Let it cook on high heat. It took me about 15minutes for all the water to be absorbed and for the rice to be cooked.

  5. 5

    I covered it with a lid until it was time to serve.
