Chapati Whole Wheat Roti and Baigan Choka

It has been a few months since I have cooked roti but this whole wheat roti made it possible again.
Chapati Roti is an authentic Indian roti eaten on a daily basis in India. It is made with whole wheat flour, coconut oil and salt. No leavening ingredients are needed.
I did a modern take on baigan choka, using it as a dip. This baigan I picked from my garden and roasted it on the stove.
Then peeled off the skin, threw it in the processor with 1 garlic, 2 tbsp cocconut oil and a few sprigs of parsley. Just add 2 tbsp of lemon juice to this for a Baba Ganoush dip.
The chapati roti tasted great with this new model baigan choka.
