Ingredients

4 servings
  1. 2 ozfeta cheese, crumbled
  2. 1/4 cfresh dill, chopped
  3. 1/4 colive oil
  4. 2 Tred wine vinegar
  5. juice of one lemon
  6. 1-1/2 tspdried oregano
  7. 1 tspsalt, plus more to taste
  8. 1 tspblack pepper, plus more to taste
  9. 1cucumber, halved and sliced
  10. 1large green bell pepper, chopped
  11. 1 pintgrape or cherry tomatoes, halved
  12. 1small red onion, halved and sliced, soaked in ice water 15 min. and drained
  13. 1/3 cblack olives
  14. 12pepperoncini, optional

Steps

  1. 1

    In large bowl, whisk together feta, dill, oil, vinegar, juice, oregano, salt and pepper.

  2. 2

    Stir in cucumbers, green peppers, tomatoes, onion and pepperoni. Serve immediately.
