Ingredients

3-servings
  • 3sweet potatoes medium
  • 1/2onion diced
  • 4 tablespoonsoil
  • 1 cupcashews
  • 3/4 cupwater (plus more for soaking cashews)
  • 1/2 tspsalt
  • 1 clovegarlic crushed
  • 2 cupsspinach frest
  • 1/4 cupbasil leaves
  • to tastepepper

  1. 1

    Soak the cashews in water for 1-2 hours. After soaking discard water and rinse the cashews well

  2. 2

    Spirilize the sweet potatoes (I love my Paderno)

  3. 3

    Heat the oil in a large wok pan and add the onions and sweet potatoes. Cook until soft but still firm (think al dente :) Add the spinach and cover until wilted.

  4. 4

    Meanwhile in a food process or or blender add the cashews, water, salt and garlic. Blend until smooth.

  5. 5

    Plate the swoodles, drizzle sauce on top, and crack pepper.

  6. 6
