Ingredients

  • 1 inchginger piece dry (sukku in Tamil)
  • 1 tspblack peppercorns
  • 1 tspcoriander seeds (dhania)
  • 3 tspspalm sugar candy (panankalkandu)
  • 3 cupswater

Steps

  1. 1

    Take 3 cups of water in a heavy bottomed vessel. Let it start to boil

  2. 2

    Meanwhile, in a mortar and pestle, pound dry ginger into small pieces. Take it out.

  3. 3

    Pound pepper and coriander seeds into a coarse powder

  4. 4

    When the water boils nicely, add the crushed dry ginger and the coarse powder of pepper and coriander seeds

  5. 5

    Add palm sugar candy and mix well

  6. 6

    Let the concoction boil in medium flame for 10 minutes, until the water reduces to 2 cups

  7. 7

    Switch off the stove. Cover the vessel and let it rest for 10 more minutes

  8. 8

    Serve it hot
