Breaded chicken with fresh basil

Since my youngest son will be off for his first year at University at the end of this month, I'm in complete "indulgent mother" mode meal-wise. And while I make his favourite meals, I'm also putting them on Cookpad so that he can make them for himself while he is away. This is a family favourite I make regularly - I like to add fresh herbs to the breadcrumbs and since basil is in season right now, yesterday I added a bunch. You can also use dried herbs, spices (cumin works well and chilli flakes add a punch), or finely grated fresh ginger, cheese etc. Serve with a nice fresh salad or coleslaw.

Wash the basil and pat dry. Break the bread up into pieces. Put the basil and bread in the food processor and blitz. Put the crumb mixture into a wide bowl

Beat two eggs in another wide bowl. Add the chicken pieces and salt and pepper

Put some oil in the frying pan and warm over a medium heat.

Coat the chicken in the breadcrumbs

Test the oil by dropping a crumb in the pan. When it starts to fizz the oil is hot enough so add the fillets. Make sure they don't touch eachother. As long as you don't heat the oil up too much, you can make several batches like this

When you take them out of pa, put the chicken fillets on a couple of pieces of kitchen roll to drain the excess oil. Then put them on a warm serving place

Add a sprig of basil and you're done!
