Ingredients

4 servings
  1. 1 lbboneless skinless chicken breasts
  2. 1/2 tspsalt
  3. 1/2 tspblack pepper
  4. 2 tsplight butter
  5. 3 clovesgarlic, minced
  6. 1/2 tspred pepper flakes
  7. 1 Tbspcapers, drained, rinsed, and chopped
  8. 14 ozdiced tomatoes (canned)

Steps

  1. 1

    Coat large skillet with cooking spray and heat over medium.

  2. 2

    Season chicken with salt and pepper and brown in skillet until juices run clear. Remove from pan and keep warm.

  3. 3

    Melt butter in same skillet, add garlic and red pepper. Cook about 30 secs.

  4. 4

    Stir in capers and add tomatoes, heat to a lightly bubbly (scrape pan for browned chicken pieces that still remain).

  5. 5

    Spoon tomato sauce on plate and top with chicken.

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more. If you have any suggestions for any of my recipes regarding ingredients or cooking methods please send me a message!!
