Place sugar, salt, oil, water, and half of the flour in a mixer bowl.

Beat using paddle until it just comes together.

Spray a dough hook with spray and mix for approximately 10 minutes.

To test dough, stretch a small piece out and look to see the membrane.

Roll dough into a smooth ball.

Pour 2 teaspoons oil into a large glass bowl. Put the dough in and coat it with the oil.

Cover with plastic wrap and refrigerate for 18-24 hours.

Preheat oven to 400°

Divide the dough into 4 pieces.

Roll each out and cover with toppings.

Mix together 1 egg and Italian seasonings. Brush on top of each roll.

Place rolls on 2 small sheet pans with silpats.

Bake for 18-20 minutes

Slice using pizza cutter.
