Ingredients

  • 2 Cupsfinely chopped coriander leaves
  • 2 cupsGram flour(besan)
  • 2 tsprice flour
  • 2 tspbhajani flour (roasted pulses flour) (optional)
  • 2 tspRed chili powder
  • 2 tspsalt
  • 2 tspGreen chili paste
  • 4 tspCarom seeds
  • 4 tspSesame seeds
  • 3 tspsalt
  • 3 tspCoriander powder
  • 3 tspJeera powder
  • 2 tspturmeric powder
  • 2 tsphing
  • 3 tspsalt
  • 3 cupswater
  • Oil for shallow frying

    Initaiily wash coriander well with water. finely chop them. Keep it aside. In a wide bowl add besan + rice flour+ bhajani flour + red chili powder etc all dry ingredients. Combine them well.

    Now add 2 cups of water into the mixed flour. Whisk the batter with whisker so no lumps can form. Now keep it aside.

    Heat oil into pan. Add jeera. then add chopped coriander. stir coriander leaves well. Cook the coriander. Then pour the mixed flour batter into cooked coriander.

    Cook this batter by continuously stiring so that it should not stick at the base of pan. After 4-5 min, it comes into a dough form. Cover it for 2-3 min. Cook it well. Then take out lid.

    Transfer ready cooked dough into a plate. Let it be cool down. After cooling, spread the dough into a plate which is already greased. Press the dough well and spred it evently from all sides into plate. It should be thick enough.I have made 2 plates of vadi. Cut the spread dough into square vadi or shape as u like like.Remove flatten cut vadi with knife carefully from the plate.

    Add 2-3 tsp oil into pan. Place 3-4 vadis into a heated pan. Turn them after 5-7 min. so that vadi turns brown from its base. Flip vadi, apply few drops of oil over vadi and fry untill brown and crispy.

    Once vadi turns brown, take them off from pan. Fry rest vadi pieces in the same way. Crispy crunchy vadi is ready to serve.

Tips

Apply sesame seeds when vadi dough is spred into a plate.
