A quick and healthy option that both kids and adults enjoy.

First, cook the pasta until al dente. Drain and set aside.

Sauté the onion with the butter in a pan.

Once the onion is caramelized, add the carrot and bell pepper.

Add the chicken broth and zucchinis.

Add salt to taste and let the broth reduce (this will happen quickly). Then add the pasta and corn. Stir and turn off the heat, allowing the flavors to combine.

Serve. You can optionally accompany it with saltine crackers, Parmesan cheese to taste, or on tostadas with cream, or with whatever you like 😋
