I had potatoes, carrots, green peppers, and onions, so I made a dish. Really, you can substitute in anything.

I had potatoes, carrots, green peppers, and onions, so I made a dish. Really, you can substitute in anything.

I used whatever I had, so the quantities are really just your preference. If you like carrots the most, put in more carrots. If you're a potato person, add in more potatoes!

Dice all above ingredients to whatever size you like. I like mine in smaller chunks in a dish like this so I can get some of everything in each bite.

Put some oil in a pan large enough to fit all of your veggies and put on medium heat.

Once the oil is nice and hot, add in onions, carrots, and potatoes. Add some water if it looks too dry and the bottom is sizzling. I also like to add in the curry powder at this time.

When everything is almost cooked to your liking, add in the peppers (I wait until the end because I like my peppers cooked but still slightly crunchy).

Add salt and black pepper as needed.
