Used to make biscuits 20+ years ago for charities and school fetes but recently things weren't working out. These however are perfect, yummy and my favourite plus my own recipe...

Pre heat oven fan assisted to 162° gas mark 3 and line baking tray with greaseproof paper

Cream the butter & sugar

Beat in the egg yolks
- 4
Add flour, ground almond, baking powder, salt & almond extract & give good mix then use blunt knife to make a dough, then use back of a spoon till it comes together.

Knead dough until smooth, then using flour roll out to 1/4" thick

Cut into desired shapes, be creative I used fluted round cookie cutter then a flower fondant cutter for the middle. I got 24.

Put in oven, middle shelf fan assisted 162° for 20 minutes, until light brown & crisp.

After a few minutes transfer to wire rack to cool.
