Pineapple Cream Cheese Cake
A fruit cake recipe my mom altered and made her own. A friend who doesn't like cream cheese devours this cake like none other. A testimonial to how delicious it truly is.

Microwave butter until completely melted. Pour into big mixing bowl. Microwave cream cheese until semi-soft and add to butter. Leave chunks as desired (I personally delight in finding small chunks as I'm eating the cake).

Add sugar and pineapple. Mix and make sure the butter has cooled sufficiently before adding the eggs. Don't let the eggs cook in the hot butter!

Add flour and mix evenly. Divide evenly into bread loaf pans (or put into one 9x13" pan. The beauty of this recipe is, no matter how you make it (with the exception of accidentally cooking the eggs), it will turn out DELICIOUS.

Bake at 325°F for 45-60 minutes. I like a golden top and you can always stick a knife in it to test the doneness. Let sit until cool and revel in its deliciousness!
