Ingredients

Serves 4 servings
  1. 1nice piece of beef short rib
  2. 1 bunchbaby carrots
  3. 4new potatoes
  4. 3 1/3 cupsfresh peas (about 500 grams)
  5. 1spring red onion
  6. salt
  7. pepper
  8. thyme

Steps

  1. 1

    In a large stockpot, bring plenty of water to a boil. Add the beef and all the other ingredients EXCEPT the peas. Simmer for at least 2 hours.

  2. 2

    Near the end of cooking, add the peas and cook for another 10 minutes.

  3. 3

    Let cool.

  4. 4

    Serve cold with tartar sauce or aioli and some pickles, if desired.
