Creamy Garlic Parmesan Mushroom Chicken

Ingredients

30 min
  1. 4boneless, skinless chicken breast fillets
  2. 2 tablespoonsolive oil
  3. 8 ouncessliced mushrooms
  4. For the Creamy Parmesan Garlic Sauce:
  5. 1/4 cupbutter
  6. 2 clovesminced garlic
  7. 1 tablespoonflour
  8. 1/2 cupchicken broth
  9. 1 cupheavy cream or half & half
  10. 1/2 cupgrated parmesan
  11. 1/2 teaspoonGarlic powder
  12. 1/4 teaspoonpepper
  13. 1/2 teaspoonsalt
  14. 1 cupchopped spinach

Cooking Instructions

    In a large skillet add olive oil & cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side & cooked until no longer pink in the center.

    Remove chicken & set aside on a plate.

    Add the sliced mushrooms to the skillet & cook for a few minutes until tender. Remove & set aside.

    To make the sauce add the butter & melt.

  5. 5

    Add garlic & cook until tender.

    Whisk in the flour until it thickens.

  7. 7

    Whisk in chicken broth, heavy cream, Parmesan cheese, garlic powder, pepper, & salt.

    Add the spinach & let simmer until it starts to thicken & the spinach wilts.

    Add the chicken & mushrooms back into the sauce & serve over pasta if desired.
