Ingredients

  1. 1/2 cupcoconut oil melted
  2. 1/4 cupnatural honey (warmed)
  3. 1egg
  4. 1 tspvanilla extract
  5. 1& 1/2 cup chickpea flour (garbanzo flour)
  6. 3/4 tspbaking soda
  7. 1/2 tspsalt
  8. 1/2-3/4 cupGhirardelli 60% cacao chocolate chips
  9. (Optional) 1/4 c chopped nuts
  10. (Optional) brown sugar

Steps

  1. 1

    Preheat oven to 350F.

  2. 2

    Line a large sheet with parchment paper.

  3. 3

    In a bowl, mix tougher the chickpea flour, baking soda, and salt

  4. 4

    In a separate bowl mix all other ingredients except the chocolate chips and nuts. Be sure to have the coconut oil warm and the honey warm.

  5. 5

    Using a wooden spoon, add dry ingredients to the wet until well mixed.

  6. 6

    Fold in chocolate chips /nuts

  7. 7

    Spoon onto baking sheet, sprinkle a little brown sugar on top.

  8. 8

    Bake for 9-12 min or until top starts to brown.

  9. 9

    Cool after baking. Makes 12 cookies !
