Because I usually cook for four people, preparing a meal just for me can be oddly challenging. A ‘Donburi (Rice Bowl)’ dish is always a good option. I stock canned mackerel in my pantry for always as mackerel is my great favourite (and fresh mackerel is rarely available where I live), and the small 120g canned mackerel is just perfect for single serving. I have introduced my ‘Miso Mackerel Don’, here is another yummy and easy ‘Curry Mackerel Don’ which will never disappoint you.

Ingredients

1 serving
  1. 1Canned Mackerel in Brine *about 120g
  2. 1/4-1/2Onion *thinly sliced
  3. 1 cloveGarlic *finely chopped
  4. Green Vegetable such as Kale, Spinach, Cabbage, etc. *as required
  5. 1/2 tablespoonOil
  6. 1 pinchSalt
  7. 1 teaspoonCurry Powder
  8. 2 tablespoonsSake OR Water
  9. 1 teaspoonSoy Sauce
  10. 1serving Freshly Cooked Rice

Steps

  1. 1

    Drain the Canned Mackerel and remove the brine.

  2. 2

    Heat Oil in a frying pan over a medium heat, cook sliced Onion, Garlic and Green Vegetable until onion is transparent. Season with Salt and Curry Powder.

  3. 3

    Add Mackerel, Sake and Soy Sauce, simmer over a low heat for a minute or so, and let all well combined.

  4. 4

    Half fill a bowl with freshly cooked rice and cover it with the Mackerel mixture.
