Chicken Enchilada Linguine Casserole

Ingredients

  1. 2 lbschicken breast cubed
  2. 1 bagpepper & onion stir fry
  3. 16-8oz can diced green chiles
  4. 1 canfire roasted diced tomatoes
  5. 1 cancream of chicken soup
  6. 1 cancheddar cheese soup
  7. 8 ozfat free sour cream
  8. 4 Tbsptaco seasoning
  9. 4 cupsMexican cheese blend separated into 2 cup portions
  10. Olive oil
  11. 16 ozlinguine

Cooking Instructions

    Make linguine according to package, drain, and set aside.

    Coat frying pan in a little olive oil and cook cubed chicken until done.

    In a large bowl combine all the rest of the ingredients, only one of the 2 cup portions of cheese, and stir to combine.

    Add in chicken and stir to combine.

    Add in linguine and stir to combine.

    Spray 9X13 baking pan with non-stick spray and pour mixture into pan.

    Top with remaining 2 cups of cheese.

    Cover with aluminum foil and put in oven preheated to 350°.

    Bake for 35-40 minutes.

    Remove from oven, remove foil, and let rest for 5 minutes.
