"Nam Prik Noom" is a popular dish among tourists and a traditional northern Thai dish that has been around for a long time. This is an authentic northern recipe made with homegrown green chilies and bird's eye chilies. However, if you want to make it, you can use chilies from the market. You don't have to grow them yourself. It's definitely delicious with pork cracklings. Let's get to it! (This recipe doesn't include fermented fish.) You don't have to come to Chiang Mai to enjoy it. (Maybe it's a mistake to share this recipe, or no one will come to Chiang Mai to eat it anymore.) Haha.

Ingredients

Serves 1-2 people
  1. 5roasted green chilies
  2. 5-10bird's eye chilies / spur chilies (add more if you like it spicier)
  3. 5roasted shallots
  4. 8roasted garlic cloves
  5. 1/2 teaspooncoarse salt
  6. 1/2 tablespoonchopped cilantro
  7. 1/2 tablespoonchopped green onions
  8. 1 tablespoonfish sauce (optional, but the recipe creator likes to add it for flavor and aroma instead of fermented fish)
  9. 1 teaspoonMSG / seasoning powder (optional for those concerned about health; the sweetness from roasted shallots will enhance the flavor)
  10. Side dishes
  11. Blanched sesbania flowers
  12. Fresh or blanched long beans
  13. Fresh acacia
  14. Fresh Thai eggplant
  15. Blanched eggplant
  16. Pork cracklings
  17. Etc

Cooking Instructions

  1. 1

Wash the chilies thoroughly and roast them along with the garlic and shallots. Peel the skins off.

  2. 2

Pound the ingredients with salt until well combined and smooth.

  3. 3

Season with fish sauce and MSG / seasoning powder (optional).

  4. 4

Garnish the chili paste with cilantro and green onions.

  5. 5

Spoon into a bowl and serve with various side dishes. (The recipe creator forgot to take a picture.)

  6. 6

Tips for preparation/ingredient selection: *Roasting the ingredients over charcoal will give the chili paste a fragrant aroma and good flavor. If you don't like it too spicy, remove some of the chili seeds to reduce the heat. *Use bird's eye chilies for added aroma and spiciness. *Use coarse salt instead of table salt for a more authentic taste, as the original recipe from grandma suggests. However, if you don't have it, table salt can be used.
