Summer citric salmon with herby feta cheese

My youngest son is poorly this week so I bought some fresh omega 3-rich salmon yesterday, had some feta cheese and half a very large lemon in the fridge that needed using up, and some lemon thyme and parsley in the garden waiting to be picked, so I came up with this recipe which, together with some lightly steamed broccoli, made a perfect immune system-boosting Summer evening meal 💪😊

Summer citric salmon with herby feta cheese

My youngest son is poorly this week so I bought some fresh omega 3-rich salmon yesterday, had some feta cheese and half a very large lemon in the fridge that needed using up, and some lemon thyme and parsley in the garden waiting to be picked, so I came up with this recipe which, together with some lightly steamed broccoli, made a perfect immune system-boosting Summer evening meal 💪😊

Ingredients

  1. 2fillets salmon
  2. 1lemon (my half one was enormous)
  3. Some feta cheese
  4. A fewsprigs lemon thyme
  5. 1small bunch parsley
  6. 1 dasholive oil
  7. Salt and pepper

Cooking Instructions

    Make some.cuts in the salmon steaks. Put them on a.large piece of greaseproof paper on an oven tray. Squeeze the lemon over them and leave for a few minutes

    Wash and chop the herbs. Crumble the feta cheese in a bowl and mix with the herbs and a dash of oil

    Press the herby cheese mixture into the cuts

    And close the paper into a kind of envelope like this. Heat the oven to 170°, once hot put the tray in the middle and bake for 20 mins if you like your salmon to have a pink centre, 25-30 if you like it well done.

    Carefully open the envelope. When you serve each salmon fillet on to the plate, carefully pour the juices from the paper over them

    Serve with veg or a green salad. Enjoy!!
