Cut the pita bread and fry it, then drain. Brush it with olive oil and sumac, and set aside.

Chop the vegetables as desired (I like the fattoush finely chopped, but you can cut it larger if you prefer).

Set the onions aside.

In a jar, prepare the dressing: mix all the ingredients and add the white onion to the dressing. Close the jar and shake it (this way, the onion smell won't be strong when you serve the fattoush).

Pour the dressing over the vegetables at serving time and garnish with the toasted bread.
