The day before, or at night, combine the flour, semolina flour, ghee, butter, sugar, and mahlab.

Before making the maamoul, add the baking powder, orange blossom water, rose water, and warm milk. Knead well.

For the filling, you can use dates, walnuts, or pistachios.

For the date filling, mix ground dates with 1 teaspoon ground nutmeg and a pinch of cinnamon, then knead with olive oil.

For the pistachio filling, coarsely grind the pistachios, add orange blossom water, and knead with simple syrup. Use the same method for walnuts.

Shape the dough into balls, fill with your chosen filling, and bake at 350°F (180°C).

Once baked, dust the tops of the pistachio and walnut maamoul with powdered sugar.
