I never knew any vegetables that smells and tastes like Fennel. When I tried it for the first time, it reminded me an insect repellent and I did not think I could eat it. But it is now one of my favourite vegetables and I cannot help but buy it when it is in season. This ‘Fennel & Orange Salad’ is my specialty and I have been making it repeatedly. I just love it!

Ingredients

4 servings
  1. 1Fennel bulb *thinly sliced
  2. 1/4Onion *thinly sliced
  3. 2-3Oranges *peeled and sliced 5mm thick
  4. Fennel Leaves 1 tablespoon *OR Dill
  5. <Dressing Ingredients>
  6. 1-2 tablespoonsLemon Juice
  7. 1/4 teaspoonSalt
  8. 1 teaspoonSugar
  9. Freshly Cracked Black Pepper

Steps

  1. 1

    Combine Lemmon Juice, Salt, Sugar and Pepper in a large bowl.

  2. 2

    Cut the Fennel bulb in half and thinly slice just like you slice an onion. Save some Fennel leaves for topping.

  3. 3

    Place thinly sliced Fennel and Onion into the bowl and toss to combine.

  4. 4

    Peel the Oranges and slice about 5mm thick, add to the bowl and gently combine.

  5. 5

    Sprinkle with the saves Fennel leaves and serve.
