Cook the fish heads with cilantro and garlic. Once it comes to a boil, strain and reserve the broth.

After straining the broth, add the curry paste and vegetables. Add the peeled shrimp last so they don't overcook. If you like, add 1/2 tablespoon of sugar before serving. Once everything is cooked, wait one minute before serving.

Once everything is cooked, add the noodles (cooked separately). Top with chopped cilantro before serving. Enjoy!
