simsim is one of the most delicious and readily available foods in Kenya. it should be included in every healthy diet... Carefully clean the simsim well making sure sand and grit is all washed out.

Drain well and spread on a good tray and put out in the sun to dry.

When dry roast the simsim being careful not to burn.

Mix sugar, cinnamon, lemon Juice in a saucepan to make a thick syrup, add the simsim to the syrup and mix well with a wooden spoon.

Mix well until the is simsim start to turn golden brown.

Then remove from the pan and using a cup on the drinking side cut circular shapes.

While cutting make sure the simsim is hot. Put in a dry tray to cool then put in a dry airtight container.

Serve the next day with tea or as a snack.
