This recipe is from Nigella Lawson's cookbook 'Simply Nigella' it is pure and simple indulgence in a ramekin! :) The recipe and photo can also be found on my blog "Off Beet Blog".

Preheat your oven to 180 degrees C. Make sure to measure out the flour, bicarbonate of soda, salt in a bowl. Mix together with a fork.

Beat the butter, sugar and vanilla extract together until light and fluffy with a creamy texture. To this add the egg, beat again to further combine.

Fold the flour mixture in gently to the butter, sugar and egg mixture. Once just combined, add the chocolate chips.

Divide the cookie dough into ramekins or muffin tray should suffice. Place the ramekins or muffin tray in the oven and bake for 13-15 minutes until golden brown.

Leave to cool. Dust with icing sugar or cocoa and serve with a scoop of ice cream :)
