On a clean surface, tip out the flour and make a well in the middle of the flour, add the eggs and slowly beat to incorporate.

Adding more flour little by little to form a dough. Knead for 5 minutes then set aside in clingfilm in the fridge to prove for 30 minutes.

Using either a pasta machine or a rolling pin, roll out the pasta to desired thickness (about 2mm thick) which is quite thin, cut into long strips or use a spaghetti or tagliatelle attachment. Once done. Bring the water to a rapid boil, add the olive oil and a good pinch of sea salt and boil pasta for 3-5 minutes per batch. Enjoy with any homemade sauce! buon apetito! :)
