Ingredients

  • 2 1/4 poundsfine bulgur wheat (about 1 kilogram)
  • 1 1/8 poundslean ground beef or lamb (about 0.5 kilogram)
  • 2onions
  • Cumin
  • Salt
  • 3 1/3 poundsground beef or lamb with fat (about 1.5 kilograms)
  • Black pepper and pine nuts

Steps

  1. 1

    First, rinse the bulgur wheat and soak it in warm water for 15 minutes.

  2. 2

    Drain the bulgur, then add one onion, 1 tablespoon cumin, and salt. Grind the mixture twice through a meat grinder.

  3. 3

    Mix in the lean ground meat and grind a third time. Adjust the salt in the dough and set it aside.

  4. 4

    Prepare the filling by sautéing the fatty ground meat with finely chopped onion. Add black pepper, salt, and pine nuts.

  5. 5

    Shape the dough by hand into cylinders, fill them with the meat mixture, and fry in hot oil. Serve hot.
