Ingredients

  • 5 tablespoonsoil
  • 1onion
  • 1 tablespoonginger and garlic paste
  • 1 teaspooncurry spice/powder
  • 2 vegetables cubed
  • 1big brinjal
  • 1 tinMixed Vegetable and Curry

Steps

  1. 1

    Fry onion, ginger and garlic

  2. 2

    Add vegetable Cubes

  3. 3

    Chop brinjal into cubes

  4. 4

    Add to onion fry until tender

  5. 5

    Add tin of mix vegetables and curry

  6. 6

    Simmer for 15 mins

  7. 7

    Serve with rice or pap
