One for the kids to make on a rainy Sunday afternoon...

Cream butter and sugar together until light and fluffy.

Add in the flour, cocoa powder and eggs (a little at a time) and the vanilla extract, mix together until all the ingredients are thoroughly mixed.

Pour mixture evenly into 2 greased round cake tins and cook at 180°C (350F) for 30-35 minutes or until golden.

Once the 2 cakes are cooked and cooled thoroughly, spread the jam on one and place the other on top.

We added some butter icing but you don't need to. Gently dust the top with icing sugar, and enjoy!
