In a bowl, combine the ground beef with the onion, garlic, parsley, and all the spices. Mix well.

Grease a large baking sheet with oil. Shape the kofta mixture into logs and place them on the sheet.

For shish kofta, do the same as above but shape the mixture into smaller pieces and thread them onto skewers, alternating with pieces of tomato, onion, green bell pepper, and carrot cubes.

Place both the shish kofta and regular kofta on the greased baking sheet. Drizzle oil over the top, add 1/4 cup water (60 ml), and cook over very low heat. Once browned on one side, turn and brown the other sides, repeating until evenly colored.

When the kofta is nicely browned, place a piece of hot charcoal in a small piece of foil in the center of the pan. Add the ghee on top of the charcoal, cover the pan tightly, and let it smoke for 10 minutes without opening.
