In a bowl, combine the spinach, leeks, green onions, feta, egg, salt, pepper, and olive oil. Mix well.

Add the flour to absorb any extra moisture (you may need a little more if needed).

Once the filling is ready, lightly oil a baking pan. Layer 4-5 sheets of phyllo dough on the bottom, brushing each sheet with a little olive oil.

Spread all the filling evenly in the center, then layer another 4-5 sheets of phyllo dough on top, again brushing each sheet with olive oil. When finished, use a knife to make 3 slits on the top layer to prevent the pie from puffing up too much.

Bake at 350°F (180°C) for about 30 minutes.
