Ingredients

35 minutes
12-14 pieces
  1. 2.2 lbsfinely chopped spinach (about 1 kg)
  2. 1 3/4 lbsfirm, tangy feta cheese, cut into small cubes (about 800 grams)
  3. 2-3leeks, finely chopped
  4. 4-5green onions, finely chopped
  5. 1 packagephyllo dough for savory pies
  6. 1egg
  7. 1 tablespoonsalt
  8. 1little black pepper
  9. 1 shot(about 2 tablespoons) olive oil
  10. 2-3 tablespoonsall-purpose flour

Steps

    In a bowl, combine the spinach, leeks, green onions, feta, egg, salt, pepper, and olive oil. Mix well.

  2. 2

    Add the flour to absorb any extra moisture (you may need a little more if needed).

  3. 3

    Once the filling is ready, lightly oil a baking pan. Layer 4-5 sheets of phyllo dough on the bottom, brushing each sheet with a little olive oil.

    Spread all the filling evenly in the center, then layer another 4-5 sheets of phyllo dough on top, again brushing each sheet with olive oil. When finished, use a knife to make 3 slits on the top layer to prevent the pie from puffing up too much.

    Bake at 350°F (180°C) for about 30 minutes.

    That’s it—your pie is ready!
