Ingredients

Makes about 25 cookies
  1. 1/2 cupbutter (125 grams)
  2. 1 cupsugar
  3. 1egg
  4. 1 teaspoonvanilla extract
  5. 1 tablespoonlemon juice
  6. Zest from 1 or 2 lemons, depending on how strong you want the flavor
  7. 1 1/2 teaspoonsbaking powder
  8. 1 1/2 cupsall-purpose flour (about 190 grams; you may need a little more)
  9. Powdered sugar

    Beat the butter and sugar together well, then add the egg. Gradually mix in all the other ingredients, adding the flour and baking powder last.

    Chill the dough in the refrigerator for 1 hour.

  3. 3

    Shape the dough into small balls, roll them in powdered sugar, and bake at 350°F (180°C) for 10-11 minutes. Makes about 25 cookies.
