The classic spanakopita recipe without cheese.

For our taste, about 1 1/2 teaspoons of salt is just right. The pie also turns out great with puff pastry. Many people add leeks, but personally, I think spinach alone tastes better. Instead of fine semolina, you can use the same amount of rice. This recipe is a combination of various recipes I found here and there, and it always turns out well for me. 1 baking pan
  1. 1 packagecountry-style phyllo dough for pies
  2. 2.2 poundsspinach (1 kg)
  3. 3-4green onions, finely chopped
  4. 2yellow onions, finely chopped
  5. 1/2 bunchdill, finely chopped
  6. 1/2 bunchparsley, finely chopped
  7. 2-3 tablespoonsfine semolina or rice
  8. Salt
  9. Pepper
  10. Olive oil (for the filling and brushing the phyllo)

  1. 1

    Wash, squeeze, and chop the spinach.

    In a large pot, add olive oil, spinach, green onions, and yellow onions. Stir constantly until the spinach is well wilted and softened.

    Add the remaining ingredients and cook over medium heat for 5 minutes, until most of the liquid is absorbed. Remove from heat.

    Brush a baking pan with olive oil and layer half of the phyllo sheets, brushing each one with oil. Add the filling.

    Continue with the remaining phyllo sheets, brushing each with oil. Brush the top sheet as well.

    Score the pie. Bake in a preheated oven at 350°F (180°C) for about 1 hour, until the phyllo is golden brown.
