About 80 medium cookies
  1. 1 1/2 cupsorange juice (about 355 ml)
  2. 1 1/2 cupssugar (about 300 grams)
  3. 1 cupolive oil (about 240 ml)
  4. 1 1/2 teaspoonsbaking soda
  5. 4 cupsself-rising flour (about 500 grams)
  6. 8 cupsall-purpose flour (about 1 kg), approximately
  7. Orange zest
  8. 1little lemon juice
  9. 1 shotbrandy (about 1 1/2 ounces or 45 ml)
  10. 1 packetvanilla powder or 1 teaspoon vanilla extract
  11. 1little cinnamon
  12. 1 pinchsalt

  1. 1

    Mix the olive oil (1 cup) with the sugar (1 1/2 cups), then gradually add the orange juice (a little less than 1 1/2 cups).

    Add the orange zest, vanilla, salt, cinnamon, and brandy (1 shot).

  3. 3

    Dissolve the baking soda (1 1/2 teaspoons, sifted to remove lumps) in the remaining orange juice and lemon juice. Stir well until the baking soda dissolves and becomes foamy. Add this soda mixture to the oil, sugar, juice, and flavorings mixture.

  4. 4

    Gradually add the self-rising flour (about 4 cups) and the all-purpose flour (about 8 cups), both sifted, mixing as you go. You may not need all the flour, or you may need a little more, depending on your flour. The dough should be soft and not overworked. The cookies will not rise much.

  5. 5

    Shape the cookies and place them on a baking sheet. Bake with convection at 350°F (180°C) for 20 to 25 minutes.
