Ingredients

30 minutes
Serves 4 servings
  1. 2.2 poundsfresh or frozen cleaned calamari (1 kilogram)
  2. 2 tablespoonsbaking soda or juice of 1 lemon*
  3. Yellow corn flour
  4. All-purpose flour
  5. Olive oil and sunflower oil for frying

30 minutes
  1. 1

    Rinse and drain the calamari in a colander. Sprinkle with the baking soda, mix well, and let sit for 15-20 minutes. Then rinse and drain again.

  2. 2

    Heat a frying pan and add the oils. Let them get hot.

  3. 3

    Dredge the calamari in flour and fry over high heat until golden brown.

  4. 4

    Place the fried calamari on paper towels to absorb excess oil.

  5. 5

    Instead of baking soda or lemon juice, you can soak the calamari in a bowl with 2/3 cup beer (150 ml) for 30 minutes.
