Rinse and drain the calamari in a colander. Sprinkle with the baking soda, mix well, and let sit for 15-20 minutes. Then rinse and drain again.

Heat a frying pan and add the oils. Let them get hot.

Dredge the calamari in flour and fry over high heat until golden brown.

Place the fried calamari on paper towels to absorb excess oil.

Instead of baking soda or lemon juice, you can soak the calamari in a bowl with 2/3 cup beer (150 ml) for 30 minutes.
