
Lentil Stew
Similar to beef stew...but better!!!
Steps

Boil rinsed lentils for 5 minutes. Then set aside to soak for 1 hour in covered pot.

Drain lentils, and add water to pot (about 4 cups of water). Return lentils to stove, bring to a boil and simmer for 10 minutes.

Add sliced carrots, and simmer for 10 minutes. Also add halved garlic cloves and olive oil; and salt and pepper. Then add the new potatoes (cut in quarters).

Add frozen peas, and simmer for the last 5 minutes.

Serve with French bread and mozzarella cheese. May add some olive oil. And sprinkle with Parmesan cheese (optional).
