In a bowl, prepare the filling by mixing the cheeses with the parsley, beaten eggs, salt, and pepper.

Lay out 4 phyllo sheets on a flat surface. Brush half of each sheet with corn oil, then fold each sheet in half.

Brush the outside of each folded sheet with more corn oil.

Grease a baking dish (such as a Pyrex) with corn oil and place one phyllo sheet in it, brushing it with corn oil as well.

Add two folded phyllo sheets, then place another unfolded sheet on top and brush it with corn oil.

Spread the cheese filling evenly and fold the bottom phyllo sheets over the filling to cover it.

Repeat the layering process with the remaining phyllo sheets.

Layer one whole sheet, two folded sheets, and one more whole sheet.

Fold the phyllo edges underneath in the baking dish.

Brush the entire surface with corn oil and score the top with a knife.

Bake in a preheated oven at 400°F (200°C) for 40 minutes.
