Wash the grapes thoroughly and let them dry. Place them in the pot with the sugar and let them boil for 10 minutes. Remove the pot from the heat, cover it with a tea towel and let it stand for 24 hours.

The next day, put it to the boil in a high setting till the syrup thickens. Just before the end add the lemon, the vanilla and the almonds. The lemon juice acts as an anticeptic and prservative that is why it is essential.

Let the preserve cool well and store it in sterilized jars.
